    Summary

    This hearty green chile stew is a perfect hands off meal to make for a busy day!

    Ingredients

    2 lb. pork tenderloin, silver skin trimmed off

    1/2 of a yellow onion, diced

    2 cloves of garlic, minced

    1/2 T. chili powder

    1/2 T. cumin

    1 1/4 t. kosher salt

    1 (4 oz) can diced green chiles

    1 cup chicken broth

    14 oz. green enchilada sauce

    Instructions

    Place all of the ingredients in a crock pot and put on a low setting to cook for 5-6 hours.
    Once the pork is cooked shred it in the crock pot with two forks.
    Serve the green chile pork stew with toppings such as shredded cheese, tomatoes, salsa, cilantro, olives, and sour cream.
    The stew may also be served over a bed of rice.
