This crunchy, colorful salad makes a great side to a spicy meal! Add avocado for a more filling salad that can stand alone.
Ingredients
½ large cucumber, peeled and cubed
2 small carrots, chopped
1 medium tomato, seeds removed, chopped
3-4 radishes, chopped
¼ cup chopped red onion
1 cup chickpeas, rinsed
½ cup chopped cilantro
Juice of ½ - 1 lemon
Large pinch sea salt
Black pepper to taste
Optional: ½ avocado, cubed
Instructions
Toss all ingredients together in a bowl.
Taste for seasoning, and add more salt, pepper, or lemon juice as desired.
Serve immediately, or cover and place in fridge to chill.
