Summary
A rich and creamy vegan sweet potato apple soup with a secret ingredient. Black tea! And lots of paprika to give it the extra depth of flavor. Gluten-Free.
Ingredients
2 1/2 - 3 cups vegetable broth
3 cups cubed sweet potatoes (about 3 medium sweet potatoes)
1 1/2 tablespoon olive oil
1 green apple, cubed (no need to peel)
1 medium onion, cubed
1/4 cup very strong black tea
1 teaspoon smoked sweet paprika
1/4 teaspoon smoked hot paprika
1/2-1 teaspoon salt
zest of 1 lime
Instructions
Preheat oven to 425 degrees F. In a bowl toss sweet potatoes and 1/2 tablespoon olive oil.
In a single layer place sweet potatoes on baking sheet and bake until soft and just starting to brown (around 30 minutes).
In a large pot heat remaining olive oil over medium heat and add onion. Cook for 1-2 minutes, add sweet potatoes and cook for 2 more min
