Ingredients
1 stick butter (softened)
1 cup granulated sugar
1 egg
1 teaspoon pure vanilla extract
1 ½ cups all-purpose flour
¾ teaspoon baking soda
½ cup white chocolate chips
½ cup chopped macadamia nuts
Instructions
Preheat your oven to 350F and large two large baking sheets with parchment paper.
Add the softened butter and granulated sugar to the bowl of a stand mixer fitted with the paddle attachment. Cream the butter and sugar together until they are light and fluffy-- about 2 minutes on medium speed.
Next, scrape down the sides of the bowl and add the egg and vanilla extract. Mix to combine.
Add the flour and baking soda and mix just until all of the dry ingredients are incorporated. You don’t want to overmix!
Add the white chocolate chips and macadamia nuts and fold them into the cookie dough gently.
Scoop the dough into 2 tablespoon sized balls and place them at least 2” apart on the parchment lined baking sheet.
Bake for 10-12 minutes or until the edges are starting to turn golden brown.
Allow the cookies to cool completely before transferring them to an airtight container. Store at room temperature for up to five days.
